Recipe: Winter Veggie & Goats Cheese Galette

Angie, who goes by the name miss_luckypony on Instagram, is a Johannesburg content creator and influencer who got inspired by our range of microgreen kits! While growing her microgreens in the comfort of her kitchen, she came up with this easy yet ornate Winter Veggie & Goats Cheese Galette recipe.

INGREDIENTS

Filling

  • 1 roll of puff pastry at room temperature
  • 2 tablespoons of butter
  • 1 medium red onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon red wine vinegar
  • 120g cream cheese
  • 120g goats cheese or feta
  • Fresh thyme
  • Salt & pepper

Veggie Layer

  • Microgreens of your choice
  • 1 sweet potato, sliced (1/4 inch thick)
  • 1 small butternut, peeled and sliced (1/4 inch thick)
  • 3 small (or 1 medium) beetroot, peeled and sliced (1/4 inch thick)
  • Small handful of goats cheese or feta

Dressing

  • 1 tablespoon red wine vinegar
  • 1 tablespoon olive oil

DIRECTIONS

  1. Pre-heat oven to 190°C, and line a baking tray with baking paper.
  2. In a pan, melt butter over medium heat and add onion, garlic and vinegar. Cook until translucent. Once done, put it aside and let it cool for a few minutes.
  3. Add the following to the onion mix once cooled: cream cheese, goats cheese, sprinkling of thyme, salt and pepper. Mix well with a fork.
  4. On a lightly floured surface, roll out the pastry in a ±35cm circle, and spread the onion/cream cheese mixture over the top of the pastry, leaving about a 5cm border.
  5. Arrange the thinly slices veggies in a circle pattern over the mixture.
  6. Crumble the extra feta over the top and season with salt and pepper.
  7. Fold the excess dough up and over the veggies, forming a border.
  8. Brush the dough with an egg wash and bake until the veggies are tender and the crust is golden brown, ±50 minutes.
  9. Meanwhile, mix together olive oil and vinegar in a small jug. Once the galette comes out the oven, drizzle the dressing all over the top and add a big bunch of fresh microgreens before serving!
